Fresh figs have a short shelf life.Because they do not ripen well after plucked, they must be picked ripe off the trees.A fig that is too hard is not ripe and will not mature correctly.Fresh fig harvesting season goes from mid-June until mid-October.If you come across them at a market, only buy them if you intend to use them right away.Within seven to ten days following harvesting, fresh figs will deteriorate.Most of the time, this means you only have three days to utilize them at home.
Choose figs that are clean, dry, and have a smooth, undamaged skin.Soft and yielding to the touch, but not mushy, is the goal.Smell the fruit with your nose.The fig has started to ferment if it smells somewhat sour.Figs that have passed their prime tend to fall inward and lose their spherical form.

Fresh figs should be kept cool to avoid deterioration.Use them right once or keep them in a plastic bag in the refrigerator’s coldest area for up to two days.Fresh figs can be frozen whole, sliced, or peeled for ten to twelve months in a sealed container.Simply defrost before using, and handle these extremely delicate fruits with care.
