Homemade Erewhon Coconut Cloud Smoothie (Vegan)

This homemade Erewhon Coconut Cloud smoothie recipe is a healthy and delicious vegan, dairy-free drink that's packed with protein, fiber, and has a gorgeous blue and white color thanks to the blue spirulina. It looks like a pretty blue sky complete with clouds! Made with almond milk, coconut cream, avocado, banana, pineapple, almond butter, vegan protein powder, vanilla, blue spirulina, and sweetener, it's an ideal quick breakfast, snack, or post-workout drink.

Ingredients
  

  • 1/2 avocado frozen
  • 1/2 banana frozen
  • 1/4 cup Unsweetened organic coconut cream cold
  • 1/2 cup Unsweetened almond milk
  • a handful pineapple frozen about 1/4 cup
  • 1 tbsp almond butter
  • 1 scoop vegan protein powder or vegan collagen powder
  • 1 tsp blue spirulina
  • 1 tsp vanilla extract
  • 1 tsp vanilla stevia optional

Instructions
 

  • Whip the coconut cream with a whisk or frother until it’s airy and light.
  • Put some of the coconut cream at the bottom of a glass and save some for the smoothie top.
  • Sprinkle some blue spirulina on the glass walls and put it aside.
  • Put the almond milk, coconut cream, avocado, banana, pineapple, almond butter, vegan protein powder, vanilla, blue spirulina, and sweetener in a blender and blend until it’s thick and smooth.
  • Fill the glass with the smoothie and add some coconut cream on top. Enjoy!
